For those of you that indulge in fruit and dairy every once in a while, I threw together this dessert tonight:

1 Papaya (small red ones, not the gigantic football sized ones)
1/2 Avocado
Handful of raspberries
1 single serve Greek Yogurt

Cut the papaya in half and scoop out the seeds.
In a bowl, gently fold the raspberries into the yogurt and spoon into the papaya halves.
Dice the avocado and place on top of the yogurt mixture.
Grab a spoon and eat the whole thing straight out of the papaya half.

This turned out absolutely wonderful, creamy and sweet at the same time. The avocado blends perfectly with the papaya.

PB is really helping me get creative in the kitchen with the food I have on hand. We rarely eat dessert, but I made the Korean Style Blackberry Ribs out of Marks new book tonight and decided we needed a treat along with the ribs. It turned out to be the perfect follow up with that meal.
