    uses for coconut milk?

    I'm sure it's been done to death, but when I search I only find coconut cream, or coconut oil. I bought a can of coconut milk yesterday, and now I have no idea what to do with it. What are your fav things to make with coconut milk?

    My fave is Haupia, Hawaiian coconut pudding

    1can coconut milk
    1can water
    1/2c arrowroot powder
    original recipe calls for 1/4c sugar, I leave it out

    Bring to a boil over medium heat, continue to boil for approximately 30min stirring continuously. The pour into a 9x13 pan and let cool in the fridge. Once cold slice into 1" squares and enjoy.

    If you take the thick part and spoon it on top of a Paleo brownie it tastes just like a Hostess Snowball. This is a special treat for me.
    Spoon it over berries
    Make custard with it

    I like to rub it all over my body in a golden tub and have my woman feed me grapes..... lol, awkward. <.< >.> Don't judge me.

    But, seriously though, i go through 2 cans a week. I mostly use it for hot cocoa (100% cocoa) instead of milk. And my GF loves to make coconut pancakes with it. Hell, drink it straight up, maybe with some stevia and/or vanilla and/or cinnamon, its delicious. Make smoothies.

    I put a few spoonfuls (along with some coconut oil and cinnamon) into mashed sweet potatoes.

    I love to use it to make:

    curried butternut squash soup
    curries in general are awesome with the addition of some coconut milk
    coconut custard
    coconut milk fruit salad dressing (the fruit salad ends up tasting like that weird marshmallow salad, minus the crap!)

    Er, idk if i'm suppose to give out the recipe for copyright reason. lol, i'm clueless with this stuff. But, i'll tell you that i got it from the Primal Blueprint Cookbook. It only uses a little bit of coconut milk, but the pancakes are awesome.
