Let Me Suggest A Meat-Slicer
After years of thinking I might like one, I bought a meat-slicer from Amazon this last Dec.; and, though it does live most of the time at the bottom of my pantry swathed in plastic, a couple times a month it comes out to make primal treats like jerky and cold cuts. I like USWellness Meats GF mini ham, round roast, pork loin roast. These cuts slice up well. My favorite cold cut recipe: rub pork roast liberally with lemon pepper (gives it that deli flavor), and a bit of salt; roast, then chill before slicing (chilled or slightly frozen meats slice the best). The slicer could be used to slice lots of foods, but meat is all I've used mine for slicing.
I also bought a pair of kevlar kitchen gloves since I would prefer not to cut myself in a lax moment, and I use them a lot for regular knife batch slicing.
