Tried my hand at a somewhat healthy desert tonight, came out very good. If you have a strong blender it's pretty easy to make. i used a vitamix, but a blendtec or something similar should work.
2c frozen strawberries, 1/2 c heavy cream, 1 tbsp honey. Blend for 30 seconds.

I'm a big fan of using honey as the sweetener in ice cream. The recipe in Sally Fallon's Nourishing Traditions calls for maple syrup, and that works fine as well, but I think it's less of a health food than honey is.
My recipe for honey and cinnamon ice cream:
3 cups heavy cream
6 egg yolks
1/3 cup honey
1 teaspoon cinnamon
Blend all ingredients in a processor, then put the mixture in an ice cream maker.
Any frozen fruit & some coconut milk make great ice cream too![]()

I am going to work on some watermellon sorbet soon. And possibly some other mellon sorbet.
I made a cocnut milk/chocolate pudding (72%) and I froze it int he ice cream maker once- delish. I may try your strawberry one with coconut milk.
I need to find some coconut milk and try that!
I made some pumpkin and coconut milk ice cream a while back that was delicious. Basically I made a stove-top custard then cooled then into the ice cream maker.
