Mix with cocoa powder and chill to make chocolate. (Add something to sweeten if you want, but it's reasonably sweet from the oil.)
Use this chocolate to make nut butter cups... put a layer in the bottom of a cup or muffin tin or whatever and chill, fill with almond butter or other nut butter of choice, and top with more chocolate.
Pour melted coconut oil onto frozen berries. It makes a crunchy coating, sort of like that stuff people pour on ice cream that hardens. Sometimes I add some cinnamon to the oil.
