    Pancetta-Wrapped Garlic-Stuffed Dates

    I had to come up with a garlic-related recipe for a cookoff over the weekend, and found a suggestion online for pancetta-wrapped garlic cloves. I ran the idea by a chef friend of mine, who suggested adding dates or figs. I'm so glad I did! This recipe was a hit, and won the appetizer category of the cookoff! The flavor combination is exquisite and tastes so decadent no one will know it's so simple.

    Ingredients:
    thinly sliced pancetta rounds (pre-packaged, or deli counter)
    un-pitted dates
    garlic cloves

    1. Pit dates using only one slit up the side.
    2. Bring a pot of water to a boil. Add garlic and cook 5-10 minutes. Drain and let cool. (If garlic is unpeeled, cook 30 seconds, drain, rinse, peel and return to pot)
    3. Preheat oven to 375.
    4. Insert garlic cloves into slitted dates.
    5. Cut pancetta rounds in half. Wrap halves around each date/garlic clove and secure with toothpick.
    6. Put goodies on a baking sheet and bake until sizzling and starting to brown, about 15 minutes. Serve hot.

    Must you really boil that garlic first?

    You don't have to, but it takes the edge off a little bit and makes the flavors blend a little bit better. And if you haven't peeled the garlic beforehand, that quick 30-second blanching helps them come off nice and easy. It's all up to you and your tastebuds.

    Damn that sounds good. Did you use medjool dates, or the regular delget noor ones?

    I believe they were medjool, but I'm not entirely sure... Sorry! I bet either of them would be equally tasty.

    EDIT: They were the smaller, golden noor variety.
