Can someone give me a quick lesson on how to figure your daily protein requirement? IIRC, it's 1 gram protein for every pound of body weight, but how does that translate into size/cuts of meat?

It's 1g for every pound of lean body weight.
I would suggest you use nutritional tracking software like CRON-o-meter to figure out how much protein is in which type of meats, because there is huge variation across protein sources, and within them, due to amounts of fat.
