I just fried chicken breast in almond flour and it's delicious!
You can also use fried pork skin flour, but it doesn't come out as neat because it's more chunky.

Maba mentioned the closest one to soy sauce already, Wheat-free Tamari. It's definitely at any whole foods, and maybe even at bigger regular grocery stores with an organic section. It's soy sauce without the wheat, and you can get low-sodium in that as well if it matters.

I've baked a pie crust with almond flour. Was a bit crumbly but tasted good. I've had great success with coconut flour for waffles. And I plan on making 2 recipes soon -- almond flour bread & coconut flour herb buns.
And I'm making baked halibut soon using ground macadamia nuts for a crust. Just haven't had time this week!
How about Braggs Liquid Aminos? It's made from NON-GMO soybeans and purified water but is not fermented or heated and is Gluten-Free. Would this be a good substitute?
I LOVE almond flour---makes the BEST pancakes---better than the 'regular' way. So quick and easy to make. Just google it-I use the About.com recipe, but add a bit of baking powder.
