Thread: Bacon Carbonara!!! page

    My favorite pasta dish pre Primal.


    And now I can have it whenever I like, and I love it even more because no yucky bland pasta getting in the way of the yummy sauce!!! Yay!!!


    My recipe for Primal Carbonara: Serves about 4

    Matchstick bacon and cook till done but soft. Remove bacon, but keep the grease.


    Thinly slice 8 portobello mushrooms (not too thin, you want them as the "noodles" so you don't want them to disintegrate when cooking)


    Saute them in the bacon grease with 4 or 5 minced cloves of garlic and remove from the pan. Pile them on 4 plates.


    Pour 1 cup of heavy cream in the pan and return to heat, on low. In a bowl mix another 1 1/2 cups cream, 8 egg yolks and 1 cup of fresh parmesan cheese, a handful of chopped fresh parsley and some chopped fresh basil (or a spinkle or dried) salt and pepper, and some garlic powder. Whisk into pan, making sure it's not too hot or the eggs will overcook. Whisk until the sauce thickens (it took me about 7-8 min before it started to thicken, I almost gave up lol I have no patience)


    Once it's thickened, either do what I did and throw some shrimp in turn off the heat and cover until the shrimp are cooked, or before you saute the mushrooms cook some diced chicken in the bacon grease, and add it at this time.


    Ladle sauce over mushroom "noodles" and try not to lick your plate when you're done. Try, but no one will fault you for licking!


    Hmmmm... I think I may have to start a food blog. Gotta start taking pics of these meals.

    If you had a spiralizer (or spiral chopper) you could closely mimic pasta with a zucchini...and then you'd really feel like you were having the 'old dish'.

    That recipe sounds fantastic! The mushrooms sound like a great base for it, too. Spaghetti squash season is almost upon us; that's another idea.

    WOW, that's a lot of cream. Sounds very yummy!


    I made some chicken casserol last night without the noodles and I've decided: if it has bacon in it, who needs noodles anyways?

    Bacon makes everything perfect

    Haha crunchy sue, you're right! They're the noodles of the animal world! I'll try to convince my husband of that as I serve him meatballs with marinara sauce over a bed of bacon He likes his bacon too, but might not go for THAT much!

    See, I never loved pasta. It tastes watery and starchy, and kind of bland. It's really just a sauce delivery device! lol


    @ Lovestoclimb, I'll have to look for a spiral chopper! I think the mushrooms were a great noodle, they had good texture, held the sauce well, and mushrooms taste so good in a carbonara!


    @ crunchysue, I make a kickass lasagne with spaghetti squash! What an awesome vegetable!
