Not that there is anything wrong with bacon, eggs, and veggies, but today I wanted something different. So....
about 1/4 cup dried unsweetened coconut
same volume of coconut milk, mixed and allow to stand until it thickens to oatmeal consistency.
Topped with 1/2 avacado and diced strawberries.
Yum!!!!

There is a regional organic store (Mrs. Greens) that has dehydrated unsweetened organic coconut.
I know, the avacado initially sounds weird, but it was really good! Kind of like a tropical fruit salad, with little bites of smooth creaminess from the avacado.
Next time I will try mango and avacado. Now THAT would be good!
I am able to find unsweetened chipped coconut at my Good Earth store. Try looking somewhere like that?
And, yeah, you lost me at avocado. Blech. Strawberries though, MMMM! Sunflower Market has them 88c a carton right now. SCORE!

I ordered Bob's Red Mill brand coconut from Amazon. I sprinkled a bunch on my butternut squash last night - Mmmmmmm!
Awesome. Thanks for all the options. I will check them out. I had just thought it would be easier to get unsweetened, pre-shredded coconut. Apparently, CW only eats the sweetened kind.

Whole Foods has unweetened coconut in their bulk area...
Unsweetened shredded coconut is easily available in grocery stores here. I am surprised it's hard to find in the US.
