    Just saw this haha!

What does it mean to "fold the whites"? By eggs you mean the the yellow, and whites you mean the clear goo?

(Can you tell I don't know much about cooking or recipes? lol)

I love to cook (it gets me into trouble, as I'm always curious as to what would go good with something else). The egg white is the clear goo, egg is the happy golden yolk. To fold, gently pour in, and pretend you're folding the laundry. 1 quarter stir, fold it over. 1 quarter stir, fold it over, etc.

She adds to the egg whites, but it's the same process. Basically you're mixing in the egg whites without getting the air out of them.

    *ponders*

Think it would work with full-fat coconut milk instead of heavy cream?

I have mixed the eggs with a can of thai kitchen (as well as almond milk). The thai kitchen version is carbier, and the almond milk is lower cal. That's about the only difference.
