    Dreaming of Summer Salad

    Primal Fuel
It's not quite time for all these to be in season but since we're getting there (at least here in CA) I thought I'd share one of my favorite summer flavor combos:

    1/2 red onion, thinly sliced
    1 tomato, thinly sliced
1 cucumber, seeded and thinly sliced
10 or so strawberries, thinly sliced
    Shake of salt and pepper

Toss together with a splash of olive oil and a splash of red wine vinegar. Let sit for about 20 minutes then enjoy!

I'm starting to hunger after salads. Up to now I've been doing lots of roasted veg and soups. (Also in California)

Pshaw, salads are a year round thing! If they weren't, Olive Garden would be out of business, LOL

They are; but this particular one features some veggies that are best in summer.

It's hard for me to eat salads "out of season." I just don't have a taste for it. Salad is a "summer" food.

With that, I've made my first big salad in months- seaweed, shitake mushrooms, tuna, sesame seeds and dressing. Can't wait for lunch tomorrow!
