I'm starting to hunger after salads. Up to now I've been doing lots of roasted veg and soups. (Also in California)
It's not quite time for all these to be in season but since we're getting there (at least here in CA) I thought I'd share one of my favorite summer flavor combos:
1/2 red onion, thinly sliced
1 tomato, thinly sliced
1 cucumber, seeded and thinly sliced
10 or so strawberries, thinly sliced
Shake of salt and pepper
Toss together with a splash of olive oil and a splash of red wine vinegar. Let sit for about 20 minutes then enjoy!
