    Almond Blondies

    Primal Blueprint Expert Certification
    I adapted this recipe from my Cooking with Coconut Flour cookbook....it's great for anyone who loves almond flavoring.


    1/3 cup melted coconut oil
    1/2 cup almond flour
    6 eggs
    1/2 cup raw sugar (or less, to taste)
    1.5 teaspoons (or less, to taste) stevia
    1/2 teaspoon salt
    1 teaspoon almond extract
    1/2 cup sifted coconut flour

    Mix all ingredients and spread in an 8x8 greased nonstick pan. Bake at 350 for 20 minutes.

    Sounds like a nice treat, although I'm not sure why it calls for both sugar and stevia. Seems one or the other would do the job. Does sugar do something to the texture?

    That particular book is not necessarily "low sugar" but it does offer "low sugar versions" of the sweeter recipes, which is what I posted here. I have not tried to eliminate the sugar completely, mainly because it's a lot of eggs to waste if it ends up being a pile of crap. I'm very careful with my eggs.
