Soak it in lemon juice for a few hours before cooking it. Rinse it. Fry it up in a pan with onions and tallow (or bacon if you prefer).
Just make sure to cook the onions to *almost* done first; the liver won't take too long.
I like to soak liver in tamari. It adds a nice flavor. Season it with steak seasoning and fry.
This sounds weird, but sometimes I throw it in a blender with a couple eggs and spices, and make liver "pancakes" with it. Quite yummy.

Enjoyed my third Monday liver installment last night, this time marinated in heavy cream and sauteed in Kerrygold. I think I might have actually enjoyed it. If my poor mother were still alive, she'd faint for sure--I hated liver as a child.
Started PB late 2008, lost 50 lbs by late 2009. Have been plateaued, but that thing may just be biting the dust: more on that later.
