This is more like baba ganoush than hummus, but since you mentioned red pepper, I thought I'd post it.
Sure just make it with Almonds instead. You can substitute almonds for the garbanzos, mixing it with tahini lemon juice and garlic till you get the right consistency, almond hummus can be very fluffy and delicious. Sunflower seeds work "okay" but not quite as good. I've seen recipes for Zucchini hummus as well, but have never tired it. (Use zucchini instead of garbanzos.)

Hummus is one of the best things to come out of the middle east. Just enjoy it guilt free.

I've tried it with eggplant instead of chick peas (came out more like baba ganoush but was good) and with cucumbers (way too watery, it was gross). I've heard you can use nuts and I bet that is delicious. Like Darth said, mix with tahini, garlic and lemon juice and whatever other spices you like. When I get to my goal weight I am going to try it with macadamias and roasted red peppers. There is no way that is not delicious!
