    Banana Muffins

    Primal Fuel
    Primal baking isn't for everyone (bingers beware!) but I really enjoy a muffin for breakfast each day

    These Primal-Friendly Banana Muffins were a pleasant surprise in my experimentation with coconut flour. They are moist, fluffy, and very filling. No dry crumbly coconut-y muffins here!

    Recipe:
    1/4 cup coconut flour
    1/4 tsp salt
    1/8 tsp baking soda
    a tiny pinch of baking powder (half the amount of baking soda)
    3 eggs
    1/4 cup oil (coconut, olive, grapeseed, whatever flavor you prefer)
    1/4 cup honey or agave nectar
    1/2 tablespoon vanilla extract
    1/2 mashed ripe banana
    dash of cinnamon

    Preheat oven to 350, grease muffin tin or use muffin cup liners.
    Mix all wet ingredients in a small bowl. Mix dry ingredients in a large bowl. Combine all ingredients and mix until well blended. Pour into muffin tin... this recipe will make 6 muffins so distribute evenly. The batter will be very runny, don't worry. Bake for 20 minutes, and enjoy! I like them warm out of the oven with butter
