    Bombay Fauxtatoes

    A primal, low carb version of Bombay potatoes. You may use white or sweet potatoes instead if you eat those. Use as a side dish for curry, meat or fish.

    This should make enough for 3-4 people as a side dish.

    tsp= teaspoon

    Ingredients:
    1 medium head of cauliflower florets
    1 white onion chopped
    2 cloves of garlic chopped
    3 tablespoons of butter or coconut butter
    2 tsp of turmeric
    1 tsp of hot chilli powder
    1 tsp of cumin
    1 tsp of ground coriander
    2 tsp of black onion seeds
    1 tsp ground ginger (dried)
    2 tsp Garam masala
    10 cardamom pods, seeds extracted and pods discarded
    salt

    Cook cauliflower until almost tender in boiling water with 1 tsp of the turmeric added. Drain and set to the side. In a large saucepan, melt the butter then fry the onion and garlic over a medium heat until softened. Add all of the spices to the onion and garlic and fry for about 3 minutes, stirring all the time and making sure it doesn't burn or stick to the pan. Add more butter if necessary. Add the cauliflower back to the pan and mix it all together, making sure the cauliflower is coated with the spice mixture. Season. Serve. Enjoy.

    I made a side dish of cucumber slices mixed with yoghurt and mint to cool down the burn of the beef curry I served with this.

    Ooooh! Excellent recipe! I was planning on making mashed cauli tonight, and though I don't have half of those ingredients I'm definitely going to use what I do have to spice it up a bit. Thanks

    Looks good, but I'm one of those people who never thinks that cauliflower can (or should) be disguised as potatoes. I'm happy to let it out of the closet as its own, wonderful self. (Good pun on words, though!)

    Forgot to add- you can also turn the cauliflower into 'rice' by ricing it as normal then adding it to the pan to coat in the spice mixture. I'm eating some of this now, it is so good!

    I can tell I need to start watching for your recipes, I LOVE spice! Think I'll try this one tomorrow, although probably with the cauliflower riced.
