Since I'm cooking a lot of chicken thighs and legs with onion and garlic in the crock pot, I'm acquiring obscene amounts of chicken stock.
What do I do with it? I skimmed the fat off the top and have it separate in the fridge.

Freeze it and use it anywhere you might use water in a savory dish.
Freeze some of it in icecube trays for when you need just a little bit...like steaming veggies.
If you have freezer space, I tend to freeze the carcasses, bones and pan drippings until I have several and then make a huge batch all at once. I also keep a baggie in the freezer for veggies a bit past their prime that I toss in to flavor the stock.
If you have a pressure canner you can can broth which can save on your freezer space.

You can use it to cook veggies in, add it as liquid with a roast, use it in mashed veg, make yummy sauces, and do all kinds of lovely things beyond just soups.
