I don't normally promote highly processed food, but if the primary goal is weight normalization then Quorn's Turk'y Roast and Chik'N tenders are vegetarian protein options that could help. Unlike Quorn's other products these two don't include gluten as an ingredient.
Whey protein powder should be relatively devoid of lactose, so that might work too.
Algal DHA supplements are the best option for vegetarians.

The coconut flour/flax meal pizza crust is pretty good and she can put whatever veggies on that if she wants. It's not nearly as calorie dense as the almond flour crust and it is pretty filling.
Yes, assuming she can tolerate Quorn. But hopefully after years of vegetarianism, she'll know.
