I'm going to be taking the Zumba certification in April (hey Mark says to dance a bit, and I LOVE Zumba). Certification is all day long, and happily they do not provide lunch or other food (that would be a carb haven!). But I need to pack snacks. I will need some carbs as this is an endurance event. But I would like to limit them to good carbs. I mainly want portable protein and fats for this. Any suggestions?

biltong, jerky, cut veggies of many kinds (such as roots that can be eaten raw like jicama, carrots, beets as well as broccoli, cauliflower, celery, radishes, and whatever else you can think of. and then, if you want, some fruit and nuts.

I would love to see the faces of your fellow instructors-in-training if you munch on bacon during break! Cooked bacon, hardboiled eggs, cheese, almonds, bananas, mashed sweet potato.

I agree with the others. Hardboiled eggs, fruit, nuts, cheese, full fat yogurt, etc.

Thanks! Yes, I'm really looking forward to it. Looking to volunteer in senior centers and any place people could use the light that Zumba brings.

i hadn't even thought of hard boiled eggs. LOL
Scotch eggs - hard boiled eggs wrapped in sausage. They are usually fried but I bake mine. They are sooooo yummy.
