    No. I went looking for ginger and I have no idea if there is some link between ginger and eggplant, but of the three stores I went to none of them had either. Needless to say I was a little I'll have to try again next weekend.

    Well... for reference I bought about 2 1/4 lbs and it came out about right once trimmed up. Maybe a little over, but I don't sweat that. In it goes!

    I also used a 1lb bag of key limes, plus some I had at home... and only 3/4 cup of turbinado sugar this round, since I like to add a little vanilla stevia when I mix it with water later anyway.

    Good stuff.

    Also.
    Making this stuff on the regular has me tempted to GROW a batch of baby ginger from seed next year.

    That was larger than I expected!
    *edit: I fixed it.

    GoT time...

    Also... my CSA list came out and NO Aubergines... there were Aubergines last week "optional" and I took the basket without because husband never eats them and I don't have standard recipes... and then the fellow posted that awesome sounding thing.
    Ugh!

    I shall have to find!

    For a great eggplant recipe I suggest... Primal Lamb Lasagna |

    Just use 3 layers of eggplant and skip the zuchini

    Also, shakshuka is great with diced eggplant added. Hell, or roast it/grill it and use it to make baba ganoush. There is also a great recipe called sabich...fried eggplant (thin slices), picked mango (pureed), hard boiled eggs, and tahina. Usually served in a pita but could be done without.
