    Theoretically, you could do a play on a Ding Dong: hollow out an angel food cupcake and fill it with dark chocolate ganache, top with whipped cream and strawberries.

    It's definitely an immediate serve item because of the whipped cream, but I may try it one day.

    That's what I'm turning up. I also know there has to be a way. The structure come from egg whites, similar to a valentino brownie. I just need to figure out what to replace the chocolate with. Maybe a 1/4 the volume coconut flour, some vanilla, and... I can't think of what the thing to counterbalance the coconut flour might be. Maybe cream cheese, but that's too volatile. Maybe milk powder?

    How about just making a meringue instead of a cake? Just fill it with the ganache, whipped cream, etc.
