I do something like this in the crockpot. Nice for holiday breakfasts when you don't want to cook in the morning.

Hey, an omelet is fancy for me...so what you come out with is just your filling underneath a layer of egg? Or I guess the egg would seep down and kinda get all cozy in the filling?
I'll have to try this but I can't call it something swanky like a quiche. Maybe a Jim-Roy. A sausage and bacon Jim-Roy.

Well, it depends on the filling. Bacon, which tends to lay flat, has a larger layer of egg on top (though you could use more and more bacon until this is not the case or *gasp* add veggies). Sausage tends to take up more space (and have more space between pieces) so the egg tends to sink down more.
Sausage and Bacon Jim-Roy sounds like something I would eat the hell out of.
