    Thanks everyone. I'm not sure how good the accent is but it's nice to hear it was not an insult to all things Scottish. And yes, everyone get on their and sing us something or heck, read a dramatic poem. It would be nice to put voices to faces, or words, or something
    somehow I manage to leave my intelligence and decorum at the door wherever I go. I doubt your journal will be an exception to that - not on the rug

    I actually tested as 'tone deaf' in high school... I was trying to play an instrument in band... the band director hung hung head and told me I should save my parents some money and find another muse (though not in those exact words).

    Today's recipes:

    Stuffed Lamb Breast (NaiadKnight)

    1 slab lamb breast- 1# per person pre-trimmed
    1 shallot, slice thin
    1/4 onion, diced
    1/2-1 head garlic, slice thin
    1/2 summer squash, 1/2" cubes
    1/4 C nuts (I think it was pecans?)
    1/4 apple- 1/2" cubes
    1/4 C red wine or vegetable broth
    1/2 tsp cumin
    1/2 tsp coriander
    3-4 fennel seeds
    smoked salt
    pepper
    1/2 tsp ground sage

    Debone and remove silverskin- set aside any meat scraps made during this process.

    Stuffing: Heat olive oil. Add everything but full lamb breast. Stir until lamb or apple is browned.

    Breast:

    Preheat oven to 400.
    Cut pockets or prep to roll and tie. Stuff or roll with warm stuffing. Liberally smear with olivo oil. Bake at 450 for 20 minutes. Rest for 10 (NaiadKnight- can you clear up the difference in temperature? It's what I wrote down)

    GeoStump's Broccoli

    Blanche broccoli until just soft. Shock in cold water. Saute- garlic in olive oil for one minute. Add broccoli. Saute 5 minutes. Add salt, pepper, lemon juice. Red pepper flakes optional.

    Canio does the same with brussels sprouts and bacon instead of broccoli and lemon.

    Drssg- It was 450*. I must've been following a loose recipe and edited as I went along.
