That is a beautiful dinner. Gawds how I wish I could cook steak without destroying it.

I need to get more brassicas to roast. Funny thing is, I detest cabbage, but I LOVE all it's kin. Cabbage is just nasty. Maybe Saturday or tomorrow I'll grab a bunch of veggies to roast, along with a beef roast, and throw it all in the oven. Coat the veggies in garlic butter, do a garlic stuffed roast, and cook it all on the same sheet pan so that the veggies cook in some of the roast drippings. Serve it with a salad... Hey, I think I know what I'm cooking Saturday!

I'm sure you can. How do you like your steak cooked?
somehow I manage to leave my intelligence and decorum at the door wherever I go. I doubt your journal will be an exception to that - not on the rug

Dang, that sounds awesome. I'm still trying to figure out what I am going to cook. I may have to steal your menu

Go ahead! It'll be two different versions ofthe same meal, so we'll be able to kinda sorta Iron chef it.

    With heat?

Really I'm not picky. I'm not a fan of well-done, so I'd say medium, or medium-rare is more my style. Nice and juicy!

    Easy sauce...

Get steak out of frige. Let it sit about an hour (so it gets to room temp.). Blot off moisture with a paper towel on both sides.

Heat a pan on medium high heat. While the pan is heating up season the steak on top side with salt, pepper, whatever spices you like.

Pat of butter in pan until it melts and foams a bit. Put steak in the pan seasoned side down. Season the top side and let it sit in the pan (don't move it!) for about 5 minutes. Flip the steak. Let it cook for about 5 minutes.

Take it off and stick it on a plate. Cover it with foil. Wait 10 minutes. Yay for medium steak.

Edit: that is the easy, I am being a lazy fuck way to make steak. Grills, iron skillets etc help but eh, the above way is easy.

Probably not in presentation and possibly not in taste. Your stuff tends to look better, and you're getting actual chef training, as opposed to my trial and error methodology.

That's the best kind I love playing around with recipes and changing things up. It's the creativity that rocks about cooking.
