Great....now I want meatloaf for dinner. That looks awesome.
1 1/2 pounds ground beef
1 pound italian sausage
grated carrot - as much as you want. I used about 2/3 of a cup I would guess
diced celery - about 1/2 a cup
diced red pepper - 2/3 of a pepper
diced onion - 1/2 large
spices - I used garlic powder, tumeric, S&P, and some cayenne (in order of the amount used)
almond meal - perhaps 1/2 a cup - enough so it all stays together
put meat in a bowl with spices and the egg.
sauted veggies until softened up a bit.
add veggies to bowl
mix well (careful veggies are hot)
add as much almond meal as needed - mix some more
put into a loaf pan
cook at 350 for about 45 minutes.
drain off the fat (or not..up to you but it stops it from being soggy)
spread tomato paste on top
back in the oven for about 15 minutes. (at this point I turned the oven up to 425 to cook my wife's tater tots. Not sure if that matters)
take it out and let it rest for about 10 minutes after pouring off any additional fat (again if you want to)

As for the meatloaf it really turned out well. I was very happy with it. Like Dave said, if there is a way to jack it up, I usually find it, at least when it comes to meatloaf.
Having followed your progress stats, it's only a matter of time before will be leading us all. The best part is it will all be done while eating ass-loads off good tasting food. ( after reading that, ass-loads and food doesn't really sound that good, but you know what I mean)
