Found the recipe:
Sub turnips for potatoes. Dad's also made this with lamb and it was spectacular. He usually uses white wine or Negro Modela for the liquid, although in a pinch he's pulled out the tequila.
Tomatillo Stew
2 lb Tomatillos, husks removed, washed, cored, chopped
1 sm Onion, fine dice
4 cloves-1 head Garlic, minced
3-5 Jalapenos, seeded, diced fine
(optional) 1 serrano
1 Tbsp Salt
1 tsp Black Pepper
2 Tbsp Oil (bacon grease works great)
1.5 lb Pork Stew Meat, trimmed, 3/4" dice
2 Tbsp Oil
Salt and Pepper
1/2 cup liquid (Water, Chicken Stock, Beer (Mexican), Tequila, White Wine, etc.)
1 lb Potato, peeled, large dice
1/2 lb Carrot, peeled, medium dice
Saute over medium heat garlic and onion in oil until fragrant. Add tomatillos, jalapenos, black pepper, and salt. Cook over medium heat, stirring frequently, until tomatillos liquefy and then reduce heat to simmer. Use a wire whip to achieve a slightly chunky consistency. Season the pork stew meat with salt and pepper. In a separate pan, brown the pork in oil over high heat. Add the pork to the tomatillo sauce. Deglaze the pan with the liquid of choice, depending on the flavor you want, and add the liquid to the stew. Add the potatoes and carrots. Simmer until done (about 20 minutes). Adjust taste with salt and pepper. Serve.

Indeed. I still need to get my paws on his prickly pear pork chop sauce.

Jon, I think I found a website for you:
Inn at the Crossroads
The authors actually cook the meals mentioned in the Ice and Fire series, recipes and all.

Wow, that website rocks! I'll have to get cooking. Speaking of GoT...great episode yesterday. I do wonder what conversations Sean Bean has with his agent.
On another note I have been listening to this song a lot lately. It's nice to see a singer that isn't a stick figure. She looks disconcertingly like my ex-wife though with a different chin.
