No this isn't some odd type of vegan fetish, I'm talking about Corn Smut aka Corn Fungus aka Huitlacoche. For anyone who's had the stones to try this dish, you know how delicious this "rotten corn" can be. While finding a consistent source of this can be quite a bit difficult, I've started considering if potentially it's better that it's not so readily available. While the dish is certainly due to fungus it is also part corn.
The overall process is due to an infection of the corn by a fungus which causes fungi filled tumors instead of corn kernels. While I don't think the whole corn plant is necessarily evil, I'm certainly not a big fan of any grains (esp. after what wheat did to my microvilli). What say you fellow low grain consumers? Would this qualify more as a fun fungi or a dangerous grain?
