Awesome - I love almond flour pancakes. Don't even really want the bread-y white flour ones anymore!
These pancakes are very light and tender.
For almond flour I use JK Gourment. It is very finely ground and certified gluten free. Grain-Free JK Gourmet Almond Flour
If you do not like stevia I would suggest 1-2 tsp of a real sweetener, 2 tsp Splenda granular or 1 pkg of Splenda. Of course sweetener is optional and too your taste!
I top them with butter but for a treat I would leave out the stevia and top them with a tsp of pure maple syrup. They are also good with ricotta crème and berries.
Other options would be to dollap a few blueberries once in the pan or some dark chocolate chips.
1/4 cup (24g) Almond flour, very finely ground
2 Tbsp (14g) Coconut flour
1/4 tsp Baking powder
1/16 tsp Stevia concentrate powder
1 Egg, large
1/2 tsp pure vanilla extract
2 Tbsp Coconut milk or other milk
4-5 Tbsp water
Mix dry ingredients then add egg, vanilla, coconut milk and 4 Tbsp of water. Whisk well.
If batter is too thick add one more Tbsp of water.
Preheat a misted skillet over medium heat until golden on each side.

Trust me on this these are way more fabulous than any white flour pancake.
I no longer use the milk as I found it not needed.
Mm those look really fluffy. Will try it on the weekend when my shipment of almond flour arrives.
