    Primal Homemade Condiments

    I went Primal just over one month ago. I haven't had to use condiments (mayo, bbq sauce, ketchup) with anything so far but want to start making my own condiments. Does anyone know how long these will last in the fridge in a jar, a week or maybe more?

    Mayo is the one you have to watch. BBQ sauce and ketchup have enough vinegar in them that they will keep refrigerated for quite a while. I wouldn't keep homemade mayo for more than a week, though, due to the raw eggs.

    I love home made tomato relish.
    Gives me something to use my garden full of tomatoes with.

    Goes something like this:

    * 1 tbs olive oil
    * 1 small brown onion, finely chopped
    * 2 garlic cloves, crushed
    * 1 small fresh red chilli, halved, deseeded, finely chopped
    * 500g ripe vine-ripened tomatoes, coarsely chopped
    * 2 tbs brown sugar
    * 2 tbs white wine vinegar

    That's just a generic recipe and I usually make much larger batches - with lots more chili.
    Anything with a little vinegar and sugar will keep well, but we plough through this stuff so quick it never gets a chance to spoil.
