    Switching Entirely to Coconut Milk

    So my daughter doesn't handle cow milk well (although she loves cheese and yogurt, and does just fine by them), and has been drinking almond milk for the last year of her life. I was wondering if switching entirely to coconut milk (like Thai Kitchen or Chaokoh) would be beneficial? We get the Silk brand almond milk, and there's a lot of extra stuff in it, whereas (in addition to antiviral qualities) coconut milk only contains coconut, water, and sometimes guar gum. Getting an equal amount of coconut milk as we do currently for almond milk would be twice as expensive. Worth it though? Advice, please.

    EDIT: I do want to mention that I have a nut milk bag, so I could potentially make my own almond or coconut milk, but my last coconut milk attempt was an epic fail

    why milk at all?

    We don't do milk at all for our youngest daughter due to dairy allergies. I don't find milk substitutes necessary.

    Oldest daughter gets raw milk in season.

    Both drink water with meals or when they are thirsty.

    I think if money is what is holding you back, you could dilute the coconut milk to make it go farther. The almond milk I've had (unsweetened in the carton), is pretty thin, whereas full fat coconut milk is super thick and sometimes not even pourable (I use Thai Kitchen organic). Also, if you are wanting to switch between the two, make sure you are getting an unsweetened almond milk!

    Yeah, we get the unsweetened (I'm diabetic, so I was using it on my cereal pre-PB). I love how thick the coconut milk from Thai Kitchen is! I think it gets me into trouble sometimes, easily polishing off a can by myself in a day.

    What about goats milk? dd and I drink it... I love it... tastes way better than CM IMO - though DH disagrees... if/when dS moves to milk other than mamas - he'll drink goats as well... : )

    What would you all recommend for coconut milk thats as close to dairy milk as possible? I tried the whole coconut milk and it was too much for me to handle. very thick and had a non sweetened yogurt taste to it.

    What problems did you have making coconut milk? I've made it twice, easily both times. I use a simplified version of the tropical traditions recipe as follows:

    1 cup dessicated coconut shavings
    1-1/2 cup hot water

    Put ingredients in a blender and blend together for a few minutes (I usually go for 3-4). Pour into a bowl lined with a handkerchief, butter muslin, or tea towel. Gather the corners together and squeeze the lump of coconut to release the milk into the bowl.

    That's it! Some people (and the Tropical Traditions recipe) have you do multiple presses (each time with fresh hot water) to extract more milk but since each subsequent press is weaker I don't bother. The result you get is a thin liquid -- Thai Kitchen and other brands are thick because of the guar gum. It'll separate if left undisturbed into a thicker, richer fraction on top, the cream, and a watery liquid on the bottom. Just shake it up before using/drinking, and do so within 2 days or so as it doesn't last very long.

    Well the major problem is we started with mature coconuts instead of young coconut. It was a pain in the @#^* to get the meat out. I blended the meat, juice & hot water together in my ninja, then strained the meat into a container with the water & juice. A thin layer formed on top, and never blended (even when shaken). It was also bitter and nasty. I will try again with young coconuts, just to say I gave it the old college try. I WANT the thick, yummy thai kitchen-like stuff. I just want a lot of it. How do I get a lot of it on the cheap? A half gallon of almond milk is $3, a half gallon of Thai Kitchen coconut milk would be $6

    What does she need any milk for at all anyways?

    My daughter is 2.5 years, i would not give her straight coconut milk as a beverage on a regular basis. she would just fill up on it and not eat anything else. fat is good but a bottle full of coconut milk for a toddler is a huge amount fat and would likely take away from their eating other foods which provide a wider ranger of nutrients.

    The coconut milk I drink only has 5 grams of fat per serving

    it tastes better than the So Delicious brand coconut milk in my opinion
