This was what I threw together tonight, and it was so good I wanted to share!

6 oz salmon filet

1 oz each sliced onion and green pepper

1 oz fresh green beans

1 oz sliced carrots

2 oz sliced mushrooms

1T coconut oil

3 oz coconut milk mixed with a couple tablespoons water to thin it out a bit

2t yellow curry powder

salt and pepper to taste

Saute the veggies in the oil in a nonstick pan for about five minutes on medium to medium high heat, then add the salmon and sprinkle with salt and pepper. Brown salmon on both sides about 5 minutes, then coursely chop the salmon a bit to speed up the cooking. Add curry powder and toss well. Once all the salmon is cooked through, turn off the stove and stir in the coconut milk and water until it's heated through, about 2 minutes. Pour it all into a shallow bowl.

It was seriously yummy!
