    Good, Better, Best Vegetables ?

    Primal Blueprint Expert Certification
    I am about two and a half weeks into primal eating. So far, everything is going great. I think I had a little dip in energy for my workouts at first, but now I am feeling great. I notice more even energy through the day. My desire for late night sweets went away on day one.

    As I move forward, I need to mix up my menu a bit (spinach, mushroom and avocado omelet and pot roast and broccoli and blueberries and cream boredom is setting in).

    What are the most primal vegetable choices?

    How about brussel sprouts and cauliflower? They're both great roasted.

    There is a great vegetable thread over in the recipes forum. That said Kale with bacon and pinenuts is like crack. Also brussel sprouts sauted in bacon fat is almost good enough to make me forget about the steak on my plate.

    It's got a ton of info: bold are "extra-nutritious" (I don't know how they decided), eating seasonal is always good and primal, and they point out which ones are most and least important to buy organic.

    Thank you Mayness! I'm trying to tip the scale a little to have a higher ratio of veggies/fruit. Your list is very helpful.

    And now I'm hungry for brussles sprouts sauteed in bacon! I've not tried that with kale, but I will.

    Thanks for link - I've just looked at this. I had to google arugula to find that it is what we here call Rocket.

    BUT - they have beets NOT HILIGHTED!!! I thought beetroot was one of THE most nutritious vegetables?!

    They're fairly high in manganese and folate, but not exceptional in anything else. http://nutritiondata.self.com/facts/...roducts/2349/2 I'm not sure it's enough to make up for the relatively high amount of sugar in beets, if that's something they took into account when making the list.     mayness, you need to have a siggy line that says "Paleo Information Desk" or something! You always have the best resources, and share them!

    I try to eat dark leafy greens everyday. Kale is my favorite, closely followed by Swiss chard and collard greens. And all three are pretty easy to grow, so that makes them even more desirable because I can walk out in the back yard and pick what I need for that dish, most of the time. But this winter has been too cold to grow them , even here in Georgia. :-(
