Can't help as far as a chutney, but I like to make a basic mango salsa that goes well with chicken or fish. Dice a mango or 2, add some diced red onion, some very finely diced (and seeded!) habanero pepper, a bit of salt, some diced avocado, and some cilantro if you are into that kind of thing. Let the flavors meld together in the fridge for a couple hours. Sorry I don't have specific measurements, I just use the eyeball and taste method.
