    Coconut-flour

    Hey folks!

    Do I take less of the coconut-flour than I would take of usual flour? Just wondering since I thought I read that somewhere a couple days ago and it is so expensive for not a lot anyways..

    We always use 1 cup of coconut flour if the recipe calls for 1 cup of flour. But if the ratio of coconut flour to regular flour is not 1:1 then I would be curious too.

    People say I am on a "crazy" diet. What is so crazy about eating veggies, fruits, seafood and organ meats? Just because I don't eat whole wheat and processed food doesn't make my diet "crazy". Maybe everyone else with a SAD are the "crazy" ones for putting that junk in their system.

    It's not a 1:1 conversion, and for a general rule of thumb you need to add additional eggs to help coconut flour not be too dense and hard.


    1 egg per 1 tablespoon of coconut flour
    4 eggs per 1/4 cup of coconut flour
    8 eggs per 1/2 cup of coconut flour
    12 eggs per 3/4 cup of coconut flour
    16 eggs per 1 cup of coconut flour

    Rivvin, great eggs:coco flour chart!

    To the OP, coco flour is very different from wheat/grain flours. It's a denser flour, requires a lot of liquid (see Rivvin's chart above) and doesn't have the gluten and gluten properties in baked goods. There are a ton of recipes online to give you some ideas on how to make whatever traditional recipe with coconut flour. Also, this blog from Mark may help too:

    I agree with the ratios above, a little bit of coconut flour goes a long way. A pound lasts a long time.
