    I'm feeling better. I am eating according to PHD today. Need to get some fermented foods.

    I was running out of my old probiotic Garden of Life, Primal Defense. I decided to order Prescript Assist and try that for a while. It is over double the price, but the reviews are fantastic. It is also not forever.

    Thinking of making my own water kefir. Question. What is the difference between kefir and kombucha?

    Answered my own question.

    Both are probiotic beverages.
    Kombucha is made from sugared tea, takes longer to brew, has more enzymes to aid in digestion. Fizzier and more tangy.
    Water Kefir is made from sugared water, brewed in 24-48 hrs. Fewer enzymes, but more probiotics. Needs to be flavored with fruit or extracts.

    well and the kefer takes the granuals, and you have to have a good scooby or grow a good scooby before making kombucha. There are probably way more steps in kombucha.

    I did not realize you could make water kefer. I mean, I have heard about making coconut milk keifer but never thought of water.

    Kefir also needs to be refreshed in milk periodically to re-feed, you can't just use it in water continuously.

    hmm, I need to read up on kefer. I did not realize a refeed was necessary. Can they be used indefinitely and do they reproduce?

    -edit- I was wrong, coconut milk requires re-feeding in regular milk periodically, water kefir uses sugar to feed.

    Yes. There are water kefir grains for making water kefir. If you take care of them, they can be used indefinitely.

    I never wanted to try kombucha because it seemed so complicated. I think water kefir is an easier option.

    Water kefir is super easy!
    I just started making it a few weeks ago.
    I've made kombucha, milk kefir and coconut kefir and water is by far the easiest!
    I've been enjoying a morning treat w plantains and/or green bananas blended up w frozen berries and water kefir. Great to start the day with a little RS probiotics combo
    You can buy grains at Cultures for Health. I bought mine dehydrated on eBay and they work well.
