Ooh, I LOVE parsnips. Just a tad sweet -- to me, they are like potatoes. Mashed, broiled, roasted, pan roasted. Swooning here...

Ummm... I think we boiled and mashed them.. they had an odd flavor I thought. Very unfamiliar.
I chop them up into my huge vat of veggie soup and most people think they are potatoes. Maybe you got an old or not so good batch? They are amazing roasted!

they seemed peppery.. not sure if that was right. Parsnip chips are good though. Whats up with that?
I love parsnips, especially roasted. But I would never mistake them for potato or expect anyone else to either. They certainly have their own distinctive flavour which may be an acquired taste.
They can also be mashed in with carrot and/or potato.
If included in a very savoury stew or soup they might go unnoticed, which is fine if you are trying to include them for those who haven't yet acquired the taste, but a bit of a waste if you do actually love them.
