    Cauliflower, Leek, and Hazelnut stuffing

I had this with Christmas lunch today. I used coconut oil, butter, and olive oil for a real mix of flavours. I also put a shredded carrot in the mix, just for fun.

It's bloody great, but takes a lot of preperation! Luckily, I made it last night ready for today.

That looks great! How was it? Looks like something I could do regularly if it got the thumbs up...

It was really really tasty and easy enough to make. Just make sure you slice and then wash the leeks really really well. They get dirt between every layer of the leaves when they grow!

I made the stuffing a couple of weeks ago. My wife and I loved it. After a few days of eating it, I used the leftovers to stuff a few chicken breasts then (of course) wrapped a slice of bacon around each breast and baked til the bacon was done.

WOW! is all we could say. It was awesome!

Bumping this thread. We had this for Thanksgiving dinner tonight. Went light on the lemon at the end. It was delicious. I would definitely make it again and recommend it for your November Thanksgiving.
