    The Muesli Myth

    It never was what shoppers were told it was.

    First, the main ingredient in the dish as served by the Swiss doctor who invented (or perhaps popularized*) it was apple.

    Secondly, the oats in it were in the form of oatmeal not rolled oats as is the case with almost all packeted muesli.

    Thirdly, the oatmeal was probably freshly ground in the kitchen the same day it was used, and the oats were soaked overnight to allow the enzyme phytase to break down the phytates in the oats, which otherwise locks minerals up.

    So nothing like it.

    Muesli from a packet isn't soaked and even if it were it wouldn't help, because rolled oats are steamed at the factory ... which kills phytase:

    ... virtually all oats are steamed or toasted as part of the rolling, grinding or milling process. "Stabilised" is the euphemism given to this process. This increases product shelf life, but also kills the phytase enzyme

    No company could, in any case, sell muesli (in its original meaning, not the meaning commerce has given the dish) in a packet in a supermarket, because it's a fresh food that goes off in just a few minutes. Real, un-dehydrated, un-sulphured grated apple, is going to go brown in a few minutes even if you do add lemon juice to it.

    It has a shelf-life (plate-life?) of less then 20 minutes: not much use to the prepared food industry. An industry that expanded less than 1% of the original ingredients into more than 98% or more of the total recipe. And conned most of the world in the process.

    And isn't there a story there? What's popularly believed to be a "health food" - on account that it was originally devised for a health clinic - isn't what was served at that clinic anyway. Once you look at what's in the product that's sold under the name you find that the changes that have been made that make the dish problematic are all to do with what increases shelf-life and, therefore, make packing, distribution, and storage easy for the makers and sellers. The nutritional value of the food, and the actual problems it might cause, is of no interest to the seller - merely an irrelevance.

    Perhaps one shouldn't over-moralize that: I suppose the people who make their money this way, the men who march on our stomachs, cynical and self-serving as they are can only do as they do because they exploit our own ignorance and laziness. Products like this are what you are going to get when you have civilizations that can't be bothered even to boil an egg or fry some bacon for breakfast.

    Of course they're not soaked in the packet. You soak it yourself.
