My favorite sweet potatoes
6-8 sweet potatoes (the orange ones)
1 cup cream
2 tablespoons butter
1 teaspoon almond extract
1 teaspoon vanilla extract
2 teaspoons salt
cinnamon, cloves, allspice to taste
Bake the sweet potatoes, whole at 350 for a couple of hours. They need to get all wrinkly and a little brown on the bottom. The sugars caramelize nicely. Don't take them out early. Cool, peel.
Potatoes go into the food processor with all other ingredients, process or blend until ridiculously smooth. I have a 20 cup food processor, so if your is smaller you have to do two batches. It's totally worth it. Pour into glass casserole and bake at 350 for one hour.
It's a perfect dessert for primal folks, and is rich enough to satisfy people who expect to see gobs of of brown sugar and/or marshmallows (gasp!) on their sweet potatoes.
Warning: kids will risk cutting their fingers on the processor blade to steal tastes of this.

Yikes, I made a mistake. It used to say 1 cup plus two tablespoons of heavy cream, but really, it's a cup of heavy cream and two tablespoons of butter, though in the end I'm not sure it matters all that much, lol.
