can anyone give me some insight to the process of getting off grains? I keep trying to make primal meals and even though I eat enough to feel full I'm starving within an hour and craving bread, rice, crackers. I feel a bit dizzy and definitely sluggish and want to nap all evening.

Other than carb flu, a common problem is not eating enough fat. What do your meals look like?

Hey man I know exactly what you're going through. When I first went primal I had no idea what the hell to eat or what to pair things with. The thing is a lot of those grainy/flour-rich foods are dense (bread, rice, crackers) and stay with you for awhile. You can expect to be hungry more often when initially making this transition. I would fill up on a nut/raisin combo between meals or throw some seeds in. A key component to eating paleo is to fill yourself up with fat because you are now using it for energy instead of wheats and grains. Look for coconut products (coconut milk, powder, etc.); most Vietnamese grocery stores sell it dirt cheap.
Your daily intake should look something like:
-50% Fat (stop buying low-fat/fat-free crap, you need it now more than ever)
-30% Protein (Meat from any source you can afford. Grass-fed is ideal, I'm a bit of a snob when it comes to this but you do with whatever means you have. Make sure its a fatty cut too, this helps you get to that 50%/day. Sometimes for us fellas, we need a supplement [protein shake])
-20% Carb (fruits and veggies)
Hang in there, you'll still miss your grains and your past indulgences and you will probably slip here and there. No worries, we have all done it. Just do better the next day. The longer you keep up with this primal eating style the more you'll adapt to it and have a lesser chance of being Naturally Selected. ;-)
It's called the low-carb flu. Also known as "kicking the habit." Grains have opiods in them - no less potent than heroin, and just as hard to free yourself from. Expect this for the next few days. Drink LOTS of water, eat LOTS of fat whenever the cravings hit, and be as kind to yourself as you can. Sleep if you need to. You can get through this - we all have.
Primal eating in a nutshell: If you are hungry, eat Primal food until you are satisfied (not stuffed). Then stop. Wait until you're hungry again. Repeat.
