I had just picked up a bunch of spinach, then saw your recipe, so had to try it. Excellent! It went well with the beef brisket and carrots I also made.
I have been enjoying this recipe all week and wanted to share. It's been a fantastic way for me to add greens that taste phenomenal. This recipe is for a single serving.
1 tbsp rendered bacon fat
Freshly ground black pepper
McCormick's Italian Herb Seasoning in Grinder
1 large handful fresh spinach leaves
Spritz of fresh lemon juice, optional
Heat bacon fat in small saute pan over medium to medium high heat. Once hot, grind in black pepper and McCormick Italian Herb seasoning. (I generally do 2 cranks of pepper and 4-5 cranks of Italian seasoning.)
Swirl the pan to flavor the fat with the seasonings. Add the spinach. Let sit for 30 seconds and then start gently turning with tongs, putting the crisper spinach leaves onto the bottom of the saute pan. Cook until nicely wilted but not mush.
Tip onto plate, spritz lightly with fresh lemon juice.
Eat immediately.

I should mention that if you don't have the McCormick Italian season grinder, it's simply a mixture of rosemary, black pepper, red pepper, garlic flakes, onion flakes, sea salt, parsely flakes and dried tomato.
