Eggnog is usually made with egg white hence my question.

I think diet egg nog might be made with egg white, but I think the authentic version uses the whole egg. I'm having a hard time finding an eggnog recipe online that doesn't use the whole egg...some even seem to use more yolk than white.

Sounds like a great idea if you are trying to cut out sugar to me!

My husband is trying to cut sugar and has found he can drink coffee without his usual two sugars if he has heavy cream in it. He also finds tea a palatable alternative. I am going to make this creamer and see what he thinks of it as well

Quick question: if I beat the heck out of coconut milk, will it turn into whipped cream like heavy cream would?

Not really, but it can get kind of close if you whip the hell out of it while it is ice cold and firm from the fridge. You'll never really get a whipped cream with it.

Just take the can of coconut milk, make sure it is settled and DO NOT SHAKE IT because you want the water to seperate from the coconut. Put that in the fridge and wait a day or two and then pull it back out. Scoop out the hardened coconut fat and whip it.

Oh yeah, I made the creamer tonight and it's pretty good.. added some vanilla extract and stevia to it as well.

I had some cream already made in the fridge (otherwise I may have been able to resist the urge), so I tossed in some cocao powder, and honey, then poured it on top of the banana walnut bread (that I turned banana choco chip) that was posted earlier. The caveman, and the little cavechildren inhaled it! Thanks for these sinful thoughts!

When you guys use the full fat cans of Coconut Milk in things, coffee, primal coconut flour pancakes, smoothies, etc. and you only use part of the can, does anyone know if you are supposed to stir the water and coconut fat and all of it together, then use it..... then store the rest (mixed together like that) in the fridge? Is it okay to mix it all together like that then store it until later use?
