    Thermonuclear Lamb Curry

    Thermonuclear Lamb Curry

    About a 3-pound leg of Lamb, de-boned and cut in 2” pieces
    1 large Onion, finely chopped
    2” section Ginger Root, minced
    6 cloves Garlic, minced
    1 Large Can (28 oz) diced Tomatoes
    2 large Serrano Chilis, caps removed and cut in half
    2 large Dried Red Chilis, caps removed and crumbled
    1 med. bunch Cilantro, coarsely chopped (reserve about Ό of it for a garnish)
    1 stick (1/4 lb.) Butter

    2 T. ground Cumin
    2 T. ground Coriander
    1 T. ground Turmeric
    2 T. Salt
    2 T. Garam Masala


    Have all ingredients prepped and measured before you begin cooking 

    Melt butter in a large heavy pot or wok. Saute onions until they start to turn golden.
    Add all spices, except Garam Masala, and salt. Continue to cook, stirring constantly, for about 5 more minutes. Do not let it burn!
    Add Ginger, Garlic, Serranos, and Dried Chilis, continue to stir and cook for a few more minute.
    Add Lamb, continue stirring and cooking until Lamb is browned.
    Add the can of Tomatoes and Garam Masala (you can add a little extra water now if you like)

    Let mixture simmer for about an hour, until Lamb is extremely tender, and the butter starts to form a thin layer on top of the curry. Stir in Cilantro, cook about another 10 minutes. You can remove the Serranos now, for the timid.

    Serve with Cauli Rice, over steamed veggies, or…..

    Makes a BIG pot full, probably 6-8 servings.

    Actually, my Serranos were large, but somewhat wimpy this time
    I just took them all out and ate them straight up.
