Inspired by a spicy peanut butter tofu wrap made with tortilla that we get at a local vegetarian restaurant, I made this wrap as a snack to tide me over till dinner but they tasted so good, I ended up making more and having them AS dinner.
Ingredients:
Romaine Lettuce Leaves (washed and patted dry) - 6
Almond butter - 6 tsps (or less)
Green apple - 1/2 chopped or raisins - a handful
Sriracha sauce or hot sauce of choice
cooked and shredded chicken - 1 cup
Spread about a tsp of almond butter in each of the Romaine leaves. Next spread some hot sauce on it. Sprinkle the apple or raisins (I love it with raisins but used apple to avoid the high amount of sugar). Equally distribute the chicken on all leaves. Roll them like a grape-leaf dolmade or a spring-roll and enjoy.
