    Two recipes for y'all.


    Pork Chops with Pie Spices

    8 oz. pork rib chops (2 chops)

    1/4 red onion, chopped (about .5 cups)

    4 oz crimini mushrooms, sliced

    3 tsp lemon juice

    1/2 cup white wine

    1 tsp each ground nutmeg, ground cloves, cinnamon, and grated fresh gingerroot

    1 TB organic coconut oil


    Heat oil in skillet over medium heat. Add coconut oil. When oil has clarified and heated, add onion and mushrooms to pan. Cook until mushrooms wilt slightly and begin to release liquid. Add pork chops to pan, and season with all spices. Turn pork chops after 4-5 minutes, add wine and lemon juice, and lower heat to medium. Allow sauce to reduce slightly. Serve chops with sauce over the top.


    Serves 2.

    Brussels Sprouts with Bacon


    12 Brussels sprouts, trimmed and halved

    2 cloves garlic, minced

    4 slices bacon

    2 TB olive oil

    Black pepper to taste

    2 TB walnuts


    Heat skillet over medium-high heat. Add bacon and cook until crisp, rendering fat. Remove bacon to paper towels to drain. Add olive oil, garlic and brussels sprouts to pan. Cook for 8-10 minutes, or until sprouts begin to caramelize. Crumble bacon and return to pan. Season with pepper.


    Toast walnuts in dry pan over stove. Add to sprout pan, toss, and serve.


    Serves 2.

    Perfect timing. I was just looking for a Brussels Sprouts recipe for the sprouts we just got from our CSA. I normally hate them, but this looks yummy. Thanks!

    @bcreager: You want to make sure to cook them long enough that they get soft. If they're still crispy, they will be a little bitter. You might even want to put the pan in the oven for ten minutes or so to really cook them through (preheat it to about 350).
