If you're seeing some good results, I wouldn't worry about hitting some sort of magic perfection. If you're losing weight and not feeling hungry, that's an awesome start! Don't worry about calories. Grok didn't.
To get feedback on your diet, it would be helpful to see a typical day's actual food. For example, the carbs from fruit and veggies....which fruit and veggies? Where does the fat come from? What do you drink?
