I have the solution.
Shredded coconut.
Coconut milk
Stevia
Take however much shredded coconut you would like, put in bowl.
Then put in enough coconut milk so that when you mix it there is some on all of the flakes, but you don't want it too liquidy.
Then put in stevia to taste, I put in three packets, which was probably too much, but it was so sweet and so delicious!

That gives me an idea. Wonder if it would be possible to make some kind of a "bread pudding" using coconut flour, mango, butter, egg, coconut milk, and maybe a smidgen of stevia. It would be a mango and sticky rice inspired recipe. Hmmmm.... I'm not a baker, so if anyone has ideas, please bring them on.

I'd be happy with the white rice, too.
I have a couple of carb-focussed meals a week (usually a mid-week evening and a weekend mid-morning breakfast), and this would work very nicely as a starter or dessert for me ... made with or without the rice. Nice one!
