Help me cook the *perfect* pork tenderloin steak please!
How long/what temp do you cook pork tenderloin chops for? Mine are about 3/4" thick.

i use a digital thermometer. get a cast iron pan scorching hot and give it a good sear first, it is 'safe' at 135F but realizes that the temp will continue to climb if you let the meat 'rest' after you take it off the heat by a few degrees
