    walnut brownies?

    Primal Blueprint Expert Certification
    Anyone try Marks walnut brownies out of his cookbook yet?
    I am going to a birthday party tomorrow and wanting to take something to have while everyone else is having cake. Just thought I'd ask and see what your opinions are on these or if you have another greta dessert idea to take to a party.

    I have, though I had to sub pecan for walnut. They were good, but a tad on the dry side.

    I like this recipe for brownies better.

    Ingredients:
    1 cup nut butter
    1 cup canned pumpkin
    1 egg
    1/3 cup honey
    1 tsp baking soda

    Combine all ingredients in a bowl. Mix well. Spoon into cupcake papers. Bake at 350 degrees for 25 minutes or until a toothpick inserted comes out clean. Makes 8.

    Truthfully, I have a really hard time not just eating the batter- lol.

    Thanks for the recipe, this sounds great. Can I use almond butter? Do you add any cocoa powder?

    I have, and I followed the recipe exactly. I really liked them. They are not really "dry", but more crumbly than normal brownies. My family didn't really like them so much since they are not as sweet as regular brownies. So, I got to have the whole batch to myself. :-)

    Hubby made them last weekend, and they were amazing. We served them as dessert for a casual dinner party. Not dry at all, in fact much moister than regular brownies. I had to fight my teenagers for a small bit of the last piece of the batch. Highly recommended, and we will certainly make again.

    Haven't tried the brownies yet, but I took the baked chocolate custard to a dinner party and it seemed to go down really well. And no-one else at the part was primal.
    Liz.

    Zone diet on and off for several years....worked, but too much focus on exact meal composition
    Primal since July 2010...skinniest I've ever been and the least stressed about food

    nope... but I made these instead! (from elanaspantry.com cinnamon bun muffin recipe tweeked to my liking)
    1 cup blanched almond flour (or hazelnut flour, which is what I used)
    2 tbsp coconut flour
    tsp baking soda
    2T cocoa (+ or- dep on what you like)
    tsp sea salt
    cup coconut oil
    2 T honey (for extra pizzazz, use raspberry honey!)
    3 eggs
    1 tbsp vanilla extract (I don't think I used this much)
    muffin tins paper cups 350 8-12 min...
    I had a hard time not eating all of these...

    I just made these blondies- not brownies as no cocoa involved. They're super moist, easy to make, and passed the non-primal eater's taste test.

    Cinnamon Blondies

    1/3 cup coconut flour sifted
    1 tsp baking powder
    1/4 tsp salt
    1 tbs cinnamon
    45 grams honey (about 3 tablespoons)
    250 grams almond butter (about 1 cup)
    100 ml coconut milk (full fat)
    150 ml water

    Preheat oven to 175C.
    Combine the dry ingredients- coconut flour, baking powder, cinnamon and salt in a bowl.
    In a separate bowl combine the wet ingredients- honey, almond butter, coconut milk and water.
    Mix the dry into the wet ingredients.
    Stir with a wooden spoons until there are no lumps
    Grease a square cake tin with butter or coconut oil.
    Pour batter into the greased cake tin and spread evenly.
    Bake for 20-25 minutes.
    Cool on a wire rack.
    Makes 24 slices.

    Just a quick update on the walnut brownies........they were a huge hit! I took Diana's (thank you,Diana) advise and tweaked the walnut brownie recipe by adding 1/2 cup of almond butter and 1/2 cup of pumpkin. They were outstanding and omgosh, SO moist.
    Peggy, where do you find raspberry honey?
